If I use my mind to go back to a childhood memory, what actually is happening? Am I actually going back in time and space?


No. You have recorded a particular time in your life and you are revisiting it in memory.
It is your mind that recorded it according to your perception of things at that time, so as you are still perceiving and thinking, you can change anything you like; embellish the memory, add to the memory and even imagine an opposite outcome.
You are lost in your own thoughts and can think as it pleases you to do so and along with your thoughts you will have images, sounds and sensations. A full 3D reality all in your mind.
But your body does not go anywhere.
You are lost in your own thoughts. This is the same as day dreaming and fantasizing, you are just lost in memories.
